There are sites around that will list the s/w required (mostly free/low cost shareware) and detailed descriptions of how to do it. Also some 'maps' generated by dedicated users.

Start with this site which is one of the tools - you will find links off this site for other sites. It's not a trivial exercise but you will get what you want.

This site has contours for UK that will install on GARMIN mapping units (even nuvis).

They are as useful as the Garmin TOPO V2 ones - may be not quite as detailed though.
