Hi mccririck,
The POI home page where you posted this question, if you look at the post 3 down from yours, How to submit a new sub category (or similar) by andy-c1.
You should find your answer.
If not, you can post again asking what type you want and what 's to go in it, and it will usually get done within a couple of days.

Other POIs - Other POI. 
They might end up in Shopping - Other - Florists. Depends how many there are.

If you are going to start a new subcategory, that will contain more than a dozen locations that will go into that subcategory, i.e. starting a Tesco Store, then it is better to submit that collection as a Data File.
