Ok, maybe I'm being thick, but what is this for?

I'm guessing so that the screen doesn't shine too bright when it's dark outside?

Exactly, from within the options menu you can from the change map change the colours for both day and night. Ideally for night time you want a low luminance that won't impede you night vision.
