I am using an iPAQ 2210 with TTN3. If I put (say) the UK maps on an SD card and (most of) the maps of Western Europe on a 1GB CF card, will the two cards work seamlessly together merely by using the "Switch map" option? Anyone tried it, please?

Yep, works fine - that's the way I have mine set up. GB +MRE on an SD card, and France and CH on a CF card. All are listed when you chose the option to switch maps.

Word of warning, because France is a big map, you need quite a fast card, otherwise it is painfully slow to calculate routes/load maps etc.

I know some people slate Sandisk, but the Ultra II CF that I have works quite well. I think it is rated at x60 or something like that....

Unless I've missed something, there's been no criticism of Sandisk CompactFlash cards. The problems that people have had have been with Sandisk SD cards.
