Crikey, there are loads, it depends what you're after! My Top 3 are:
1. Ilium Software's EWallet which is a secure wallet app that allows you to store Credi Card, Bank, Passwords etc

- Stock Manager if you have an investment portfolio
- Avant Go for News, Weather, Film listings, Sport. TV listings etc etc
- Pocket Notepad which is just like the Windows desktop version
- Pocket Genealogist if you're into Family History
- VITO AstroNavigator if you like looking at the stars
- VITO Navigator for compass, odometer etc etc
I have all these loaded on my Mitac 168's storage card, together with CoPilot, and it makes the PDA a veritable souce of portable information.

I prefer Spb Pocket Plus to Battery Pack Pro - especially as the latter doesn't work properly on the iPAQ hx4700 at the moment and the former works perfectly and has VGA support. I do agree with Darren's other choices though.
Others in my list include Sprite Backup Premium Edition (the built-in iPAQ Backup is an older version of Sprite Backup), Spb GPRS Monitor, Pocket Informant (I'm using the latest 5.61, not the version in the hx4700 ROM), PItoday, smartGSM, Fitaly (looks strange, but try it - I find it by far the fastest method of entering information into my Pocket PC using the stylus), Anton Tomov's Pocket Mechanic, Conduits' Pocket Player (the new 2.52 release is fully VGA aware for those using VGA Pocket PCs - amongst other things, Pocket Player can play MP3 files from a network share over a wireless network), Pocket IRC and Resco Picture Viewer.
I work my Pocket PC hard! Most of these can be found on Handango - I've given a link to the one that I don't believe can be found there.
