The way to hide them is as sussamb has said.
On my Garmin, I go into settings for Map & Vehicle ... Map Layers and uncheck Up Ahead and press Save.

I tried that Dales and it hid all the knives and forks icons but, unfortunately, it his the speed cameras too. |

Thanks Dales but I've done exactly that and I lose the knives and forks but I also lose the speed cameras. |

Well, Coaster2, that doesn't sound quite right to me, because these POI types are stored in different places, and they are each disabled in their own different ways.
The 'Big Blue Icon' knives & forks (ie Restaurants) POIs are effectively built into the map; and they are turned on or off by disabling Up Ahead in the Map Layers.
Whereas the PGPSW speed camera POIs are stored in the Garmin's POI folder. And if they are present there, they are turned on or off by disabling Custom POIs in Proximity Alerts.
My own Garmin works just fine, with Up Ahead disabled and Custom POIs enabled.
If I were you, I would have another go, and methodically.
Load your PGPSW speed cameras with PoiLoader. (There should now be a .gpi file with today's date in the Garmin's POI folder).
Make sure that Custom POIs are Enabled in Proximity Alerts.
Now disable Up Ahead in the Map Layers, and that should do it.
NB At any stage, you can do a demo run to check things out.
In Navigation, press GPS Simulator. Then set a dummy route past some Restaurants and PGPSW speed cameras, and check out your results !

Having followed your instructions to the letter I find that, while all the knives and forks icons disappear, so do all the camera icons. However, the cameras are still working as I still get the audio alerts. I'll settle for that.

Missing camera icons is another fix.
