With regard to full stops, commas and degree marks, how exactly would I enter the above when planning an itinerary.

First make sure that you have selected the right coordinate format. You do this by pressing the configure button in the GPS signal strength view. In this case you should select the format in the middle.

Afte you've done this you simply type the coordinates as you have written them above, except that you can skip the fist two zeroes i the longitude. When I enter this coordinate I end up in in a small village outside Malaga. Is that where you wanted to go?
