Just wondering if anyone has found a nice way to feed the voice output from tom tom or the like into their car stereo so commands aren't missed if the music is on ?

Depends on a lot of things - if you don't want to listen to music then you can use a tape adaptor or an (illegal) FM transmitter.

If you want to have the voices overlaid over the music, then if your stereo has navigation inputs it might work.

Apart from that, the easiest way is to use a mount with a built-in speaker. I use a Seidio (lots of mixed opinions on here about them!) which works great - very loud even with loud music on the motorway. There are plenty of others available though (Brodit, etc).

Yeah, I ideally want to overlay the voice commands with the stereo. The stereo has AUX inputs, would these do it ?

Would depend on the Stereo. The Aux input is probably a separate channel, which wouldn't overlay the incoming signal on top of what is already playing. Then again, it's a possibility that it might - dig out the manual!
