I'm thinking of purchasing a TTG 300 but reading all these thread has made me more confused than before! When I get it can I just plug it and go? Will I be able to type a 7 digit postcode and it will take me to that place? Will I have to pay for updates every year? And will I have to update as soon as I get it?

If you buy a Tom Tom Go300 you WILL be able to navigate to a 7 digit postcode and can basically use it straight from the box.The only time you will have to pay for updates is when the new maps are released but this seems likely to be at least a couple of years as the 300 will come with the latest maps.
Software updates are free to download as they are released.
Also the speed camera database is free to download from this site.

But since they are only a little bit less out of date than the previous lot, there's little point in updating unless you know that they fix a particular issue which is important to you.
